So true! The "Central Definitions" part really resonated with me. Have you seen those codified in different systems/code or are they usually just words in a doc?
I've seen them codified as SQL queries or LookML files, but the problem is that those need to be constantly updated as the schema changes. Since there isn't a good way to enforce consistency I find the written document definitions work best.
